Nonna Maria's Chicken Marsala

1/2 cup all purpose flour

2 (6 ounce) boneless,skinless chicken breast cut in halves and pounded thin

1 tablespoon extra virgin olive oil

4 tablespoons butter

3 cups sliced mushrooms

3/4 cup Marsala

1 cup chicken stock

Salt and freshly ground pepper  

In a shallow bowl or plate quickly dredge the chicken breast halves in the flour, shaking to remove any excess flour. Heat the extra virgin olive oil in a large skillet over medium-high heat. Add 1 tablespoon of butter and cook the chicken breast until golden, about 3 minutes per side. Transfer to a plate. Add 1 tablespoon of butter to the pan, add mushrooms. Cook until mushrooms are golden. Add the Marsala vino and bring to a boil. When the vino has reduced by half add chicken stock,cook for 3 minutes. Return chicken breast to the pan cook for about 5 to 6 minutes. Add butter, salt and pepper.
