Dinner At Dawn Goes to Italy

Chef Frank from Nonna Maria's in Oracle takes Scott to his kitchen to make up a recipe he picked up in Italy.  This week's dish is Linguini with Clams.  Chef Frank admitted he usually uses a dash of white wine at La Ruota Trattotria Pizzeria in Sicily. 

Chef Antonio Lentini has fresh clams sitting in an aquarium ready for a fresh dish.  Chef Frank assisted in the preparation and shares the recipe: 

 

Linguini with Clams

1pound Linguini pasta

1pound Clams

1tablespoon Chopped Parsely

1teaspoon Salt

1teaspoon Black pepper

1teaspoon Crushed Red peppers

1tablespoon Chopped Garlic

3 tablespoons Extra Virgen Olvie Oil

1/4 cup water

Cook linguini to package instructions .

 Place on medium heat ,sauce pan, add extra virgen olvie oil and chopped garlic cook till

garlic is golden . add clams salt ,black pepper , crushed red peppers,chopped parsley

water.Let it cook for 5 to 8 minutes till clams open .Add linguini to the pan ,let it simmer for 2 minutes ,and serve .
