Ginger Pork Medallions

Ginger Pork Medallions by Frank Palazzolo

1 pound of pork tenderloins diced

1/3 c of all purpose flour

1/4 tsp salt

1/4 tsp pepper

1/4 tsp ginger

1/3 c chicken broth

2 oz lemon juice

2 oz butter  

In large Ziploc baggie combine the flour, salt ,pepper. Add pork a few pieces at a time and shake to coat.   Over a medium - high heat place large skillet add butter,  cook pork 4minutes on each side till brown, add ginger, drizzle lemon over pork while cooking.   In the same skillet add chicken broth bring to a boil.  Reduce heat let simmer 3-4 min.  

Serve medallions on plate & drizzle sauce over medallions
