What to do with Thanksgiving left-overs

Turkey Scallopini


11/2 pounds (1/4inch thick) sliced Turkey
1/2  cup of Bread Crumbs
2     eggs
1/4  cup grated Parmesan cheese
1/4  cup Butter
1/8  teaspoon Salt
1/8  teaspoon Ground Pepper

In a bowl beat eggs.
In another bowl combine bread crumbs,salt ,pepper and Parmesan
Dip turkey in egg mixture and coat with bread crumbs.

Melt butter in skillet over a Medium-High heat,cook for 2 to 3 minutes on each side,
until meat juices runs clear and coating is golden.
 
Can be topped with Gravy or Marinara Sauce .
