6 eggs
4 ounces red pepper chopped
4 ounces green pepper chopped
4 ounces red onions chopped
4 ounces mild Italian sausage
2 ounces extra virgin olive oil
2 tablespoons minced garlic
2 ounces asiago cheese shredded
3 ounces of pepperoni sliced & chopped
Preheat oven to 375
1. Heat skillet on med heat, add extra virgin olive oil & sausage. Let sausage brown approx 3 min. 2. Add to skillet green & red pepper, onions, pepperoni & minced garlic. Mix all ingredients together & cook for approx 3-4 min. 3. In a separate bowl scramble eggs well. 4. Place the scrambled eggs in a 8x8 greased baking pan. 5.Add the skillet mix in to the egg mix in the baking pan. 6.allow the mix to bake for approx 25 min. 7. Once done allow to cool.
Once cool place a plate on top of pan & flip frittata out. Garnish with Asiago cheese & serve.
