Black Bean & Corn Salad

Ingredients:

1 can black beans (14 oz), rinsed and drained

1 can corn (14 oz), drained

1 can hearts of palm (14 oz), drained and sliced

3 ripe tomatoes, diced

1 medium red onion, diced

1 bunch cilantro, chopped

1 jalapeno, diced

3 cloves garlic, minced

1/3 cup lime juice

1/2 cup extra virgin olive oil

1 tbsp salt

1 tbsp sugar

Endive or lettuce leaves

Directions:

Gently mix all the ingredients, serve at room temperature over lettuce leaves. Add grilled shrimp or chicken as desired.
