Big Fat Caesar Sandwich

From Baggins

1 french baguette
1 tbsp butter or margarine
2 tsp fresh grated parmesan
1 tsp dry basil
1 tsp dry oregano
2 tsp fresh lemon juice
1 cup of marinated and cooked chicken breast, hand pulled into bite sized strips
1 tbsp fresh shredded parmesan
1 1/2 cups chopped romaine lettuce
Approximately 1/2 cup of your favorite caeser dressing

Cut the baguette lengthwise. Lightly spread the butter on both sides, edge to edge. Sprinkle the grated parmesan and 1/2 tsp each of basil and oregano on top. Place the baguette face down on a griddle to toast. Another option is to toast in an oven openfaced.

Heat the chicken breast on the griddle or in a saute pan while tossing with the lemon juice and remainder of the basil and oregano. Do not over heat the chicken to avoid drying out.

Toss the chicken and romaine lettuce in caeser dressing to lightly coat. Spread ceaser dressing on the toasted baguette thinly, but edge to edge. Top the baguette with the chicken and romaine. Sprinkle on the Shredded parmesan for extra flavor. Serve immediately! Yum!
