Ahi Tataki by Chef Brett Vibber

2oz. seared, sliced ahi tuna

1 Sunkist orange, segmented

2oz. shaved white onion

1/4 C. chopped romaine

1/4 red bell pepper sliced thin

Thin sliced scallions to garnish

Tataki Sauce

2 C. Soy sauce

1 C. Sesame oil

1/2 C. Rice wine vinegar

6oz. whole peeled ginger

process all in a blender

Get a pan hot on your stove. Season Ahi with salt and pepper.   Add 1/4 cup of cooking oil to pan and sear each side of ahi.   Slice thin and place in a bowl with some of Tataki sauce to marinade.   Mix onion, orange, romaine and bell pepper.   Lay Ahi out on a plate and place salad in center.   Garnish with thin sliced scallions
