Ahi tuna over mixed greens tossed in a champagne vinaigrette and topped with a mango salsa
Mango Salsa
1 qt diced mango
1/4 diced red onion
1/4 diced red bell pepper
1/4 bunch minced cilantro
1/2 lime juice
salt and pepper to taste
splash champagne vinegar
mix all ingredients in a bowl at least ½ hour before serving.
Champagne vinegar:
2 cups mild oil (something like canola-not olive)
1 minced shallot
1 lime juiced
1 ½ cups champagne vinegar
salt and pepper to taste
put all the ingredients except the oil in a blender turn on and slowly add the oil.
In order to sear the Ahi Tuna put the tuna steak in a hot pan with olive oil and cook for about 1 1/2 minutes on each side.
