Pistachio-crusted Taleggio Cheese

with Whiskey Honey Red Pepper Coulis

for the sauce:

2 T Scotch whiskey

6 peeled roasted red peppers

2 t lemon juice

2 t honey

Salt and pepper to taste

Reduce whiskey by ¾

Puree peppers, lemon juice, honey, and whiskey reduction

Push through a sieve

Season to taste

For the cheese:

8 oz taleggio cheese

1 c shelled pistachios, roasted

Cut the cheese into ¼" thick, 2" squares.  Grind the pistachios in a food processor and press them into the cheese.  Over medium-high heat, sear the cheese.  Serve over the warmed sauce with toast points.

Serves 6-8.
