Big Eye Tuna
Ingredients:
Tuna, Thinly Sliced 2 oz.
Avocado and Jicama Mash 3 oz.
Sesame Seeds, Toasted pinch
Radish, thinly sliced 5-7 ea
Green Onions, sliced thinly 1 tsp.
Cilantro, leaves 5 ea.
Yuzu Emulsion 1 tbls
Sea Salt. pinch
METHOD
1. Place a line of the avocado mash down the center of a chilled plate.
2. Top the mash with the 2 oz. of thinly sliced Tuna.
3. Drizzle the Tuna with 2/3rds. of Yuzu emulsion and sprinkle with a pinch
of sea salt.
4. In a mixing bowl place the Green Onion, Cilantro leaves, Radish and the
rest of the Yuzu Emulsion. Mix.
5. Place the salad on top of the Tuna.
6. Finish by sprinkling a pinch of toasted Sesame Seeds on top.
