WHAT'S FOR LUNCH: Grilled Shrimp Avery from Catalina BBQ

Grilled Shrimp Avery 

Shrimp

8ea 16/20 Shrimp P&D Tail On

3 Tablespoons Catalina Barbeque Company All Purpose BBQ Rub.

 

BBQ Sauce for Shrimp

½ cup Catalina Barbeque Company Piloncillo BBQ Sauce

¼ cup Amber Beer

1 Tablespoon Dijon Mustard

1 Tablespoon Dried Thyme

½ Teaspoon Dried Oregano

 

Cheese Grits

¼ cup Quick Grits

½ cup Water

2 Tablespoons Butter

Pinch Salt and Pepper

To Taste Shredded Cheddar and Jack Cheese

Grilled Asparagus (Optional)

Method:

Sauce:

Mix all ingredients together in a sauce pot and simmer till it thickens back to the consistency as the BBQ sauce. (10-15min)

Shrimp:

Toss shrimp with rub till evenly coated. Grill shrimp on both sides on a hot grill till done. (8-10min)

Grits:

While shrimp are grilling, in a sauce pan, bring the water and butter up to a boil. Once boiling add grits and cook till tender. (5min) Season with salt and pepper and Cheese.
