PAPA BOCA
 
1 Pound baked potato
1/3 of a white onion julienne
1 tbs spoon of butter
salt
pepper
garlic powder
chile powder
cheese
Meat of your choice ( can be chicken, steak or any other)
 
BOCA SAUCE
 
1 roasted red bell pepper ( peel and cubed)
4 strips of bacon (cubed)
1/3 of a white onion (chopped)
1 medium can of tomato sauce
salt
pepper
2 garlic cloves (chopped)
1 chipotle pepper
 
Cut off top of potato and with a spoon take out the meat without breaking the skin. cube the potato and sauté with the onions and butter, then add the meat of your choice and season to taste with spices. Stuff as much of this mixture back into potato as possible and cover with cheese then put it in the oven till the cheese is melted.
 
Boca sauce- place bacon in pan on high till cooked (not crispy) add the onions then the rest of the ingredients, season to taste. let it boil for 30 min (low heat)
 
When the cheese is melted take the potato out of oven place on a plate and add remainder of stuffing to the papa boca and cover with boca sauce then top with a roasted anaheim pepper and PROVECHO!
