Chipotle Caesar Salad
YIELD: Makes 4 servings
INGREDIENTS:
4 C. romaine lettuce, hand-torn or chopped
½ C. Miraval chipotle Caesar dressing
4 parmesan crisps
4 t. cumin-scented tortilla strips
2 t. Parmesan Reggiano, microplaned
2 t. fresh lemon zest
DIRECTIONS:
Combine the lettuce and dressing in a chilled bowl along with the freshly grated parmesan. Mix well.
Divide salad mixture equally onto 4 chilled salad plates and garnish with tortilla strips and parmesan crisp. Microplane fresh lemon zest on top of each salad and enjoy.
