YIELD: Makes 3 cups
INGREDIENTS:
3 T. Dijon mustard
1 t. oregano, minced
1 t. basil, chiffonade
1 t. chopped garlic
1 ½ T. shallots, minced
2 T. agave nectar
2 C. thickened vegetable stock
¼ C. balsamic vinegar
2 T. extra-virgin olive oil
½ t. kosher salt
¼ t. black pepper, freshly ground
DIRECTIONS:
In a blender, combine balsamic vinegar, mustard, herbs, garlic, shallots, thickened vegetable stock, and agave nectar. Blend until shallots are incorporated. While blending slowly add olive oil to emulsify. Season with salt and pepper.

Salad serving suggestion:
1 loose cup of spring mix lettuce per serving
1 teaspoon Maytag blue cheese crumbles per serving
1 tablespoon sliced or julienne Granny Smith apples (skin on) per serving
½ tablespoon chopped California walnuts per serving
2 tablespoons of balsamic vinaigrette per serving
Toss spring mix with vinaigrette; top with walnut pieces, Maytag blue cheese and julienne Granny Smith apples. Serve immediately.
