2 pieces pork tenderloin pounded thin & seasoned with salt & pepper
seasoned all purpose flour
julienned sage
julienned shiitakes
maidera
pork jus
butter
blended oil
Season both sides of pork & bread in flour.
Shake off excess.
Heat sauté' pan & sauté'' pork on one side with color.
Just touch other side to seal and remove from pan.
Dump excess oil. Add oil & butter and sauté'' shiitakes.
Deglaze with maidera. Add sage warm slightly, then add pork jus.
Reduce & mount with butter to thicken slightly.
