Roasted Idaho Salmon from Feast
4 whole rainbow trout, gutted and boned
Olive oil
Salt and pepper
Sear the fishes one at a time in a nonstick pan with olive oil, salt and pepper. Move to a baking sheet and bake at 375 degrees until just cooked through (you can lift the belly flap to check the translucence of the flesh)- about 15 minutes. While the fish is cooking, make the relish:
6 medium radishes
2 medium navel oranges
2 dozen leaves fresh mint
Zest of 2 lemons
2 T olive oil
Salt and pepper to taste
Finely slice the radishes on a mandoline. Segment the oranges. Pick the mint from its stems, and zest the lemons. Toss all the ingredients together in the olive oil and season with salt and pepper. Top the hot fish with the cold relish and serve immediately.
Serves 4.
