What's for lunch: Avocado Custard from Feast

Avocado Custard

INGREDIENTS:

2 c heavy cream

4 eggs

1 ripe avocado

1/2 T lemon juice

salt and pepper to taste

 

METHOD:

Put half of the cream into a food processor, and add the pitted and skinned avocado.  Puree until the avocado is completely mixed with the cream.  Transfer the cream mix to a bowl, and add the rest of the ingredients.  Whisk together mixture, and pour into ramekins lined with parchment paper and greased.  Bake in a water bath in a 350-degree oven for 45 minutes to an hour.
