What's for lunch: Pumpkin flan

Pumpkin Flan by Zac Bentzel, Sous Chef of Wildflower



1 Pumpkin Flan

.75 Oz Cider Carmel Sauce

1.5 Tbsp Marshmallow

1 Brown Butter Semifreddo

1 Tbsp Pomegranate Seeds



1. Un-mold the Flan and place it on the right center of the plate.

2. Drizzle the Carmel over the flan.

3. Place the scoop of marshmallow on top of the flan.

4. With a torch burn the mallow until dark brown.

5. Place the Semifreddo on the left center of the plate.

6. Sprinkle with pomegranate seeds
