Kingfisher's Guinness Oyster Stew

Kingfisher's Guinness Oyster Stew serves 4

In celebration of Kingfisher's Oysterfest Saturday, November 10 from 10a.m. - 2p.m.


24 freshly shucked oysters, reserve liquor

1 oz butter

5 T flour

2 T minced celery

2 T minced shallots

1 t minced garlic

½  cup Guinness

½ cup milk

1 ½ cup heavy cream

1 t Worcestershire

1 t Italian chopped parsley

½ t kosher salt

½ t white pepper

In a sauce pan over med heat melt butter, add garlic .shallots and celery and stir until veggies soften 2-3 minutes. Add flour, salt and white pepper continue to stir let roux color slightly, add Guinness and milk stir to incorporate, add Worcestershire, and bring to a simmer gently simmer to cook out alcohol and to thicken/reduce. Turn down heat, add cream/oyster liquor, and bring to a simmer, add oysters, gently cook stirring to incorporate, do not boil, add parsley and serve immediately with crusty bread
