Recipe: Sonoran Dog

All beef dogs (4)
Hot dog bun (4)
Shredded Asadero Cheese 1/4 cup
Pico de Gallo:
Tomatoes small dice (3)
Yellow Onions small dice (1)
Cilantro minced 1/3 cup
Fresh Lime juice (5-6)
Salt and Pepper to taste
Heavy Mayonnaise (1 cup)
Chipotle in Adobo sauce 1/2 small can
Slice dog down middle but not all the way though then wrap dog tight with bacon.
Fry in saute pan with a little oil on medium low heat, cooking until brown on all sides.
Dice onion, tomatoes and cilantro, place in bowl and mix with lime juice and salt & pepper, set aside
Add mayonnaise and Chipotle in blender until mixed and smooth.
How to build: Take warm bun, place dog inside, and top with pico, mayonnaise mixture and mustard.
