Chef Jimmy Hanser from Whole Food's Mason offers up his recipe for Quinoa Salad.
Partially boil 3 cups of Red Quinoa.
Mix the following before adding to quinoa.
1/2 cup red pepper
1/2 cup raisins
1/2 cup mango
1/2 cup edemame
1/2 cup red onion
1/2 cup coconut
1/2 cup almonds
2 tbs balsamic vinegar
2 tbs lime juice
2 tbs cilantro
*All fruit and veggies should be diced
Add mixture to quinoa and mix.
Add a little salt and pepper for taste.
