Duck Street Caramelos - Jax Kitchen

Ingredients:
  • Mozzarella Curd
  • Corn Tortillas
  • Pulled Duck Leg Meat
  • Caramelized onion
  • Salt + pepper to taste
  • 1 tbl Olive Oil
Garnish:
  • Pickled Avocado
  • Yellow Heirloom Tomato Salsa
Put the Olive oil in a hot sautee pan. After 1 minute, place the corn tortilla in the oil.

Place the mozzarella curd, pulled duck meat and caramelized onions on top of the tortilla season with salt and pepper.

Put the other tortilla on top, and heat on that side for 3 minutes, or until Golden brown.

Flip the Caramelo, let cook for 2-3 minutes on that side.

Pull the caramelo out of the oil, and let rest on paper towel to dry it off.

Cut down the middle, serve with the salsa, pickled avocado and a squeeze of fresh lime. Enjoy.
