1 large russet potato
1 teaspoon of low-fat sour cream
2 chives, sliced into small pieces
2 dried currants or raisins
4 baby carrots
3 slivered almonds (optional)
Preheat the oven to 350 degrees. Wash potato with a brush and cold water. Dry and poke 8 holes with a fork. Place potatoes directly on oven rack (or on a baking sheet). Bake for one hour until the potato feels soft (test with a fork). Remove from oven and allow 10 minutes to cool or wait until potato is manageable to touch. Now it's time to make your Foodimal.
Cut two slits towards the front of the potato and scoop out some of the potato to make the mouth. Add a dollop of low-fat sour cream for the tongue and a few chives for the teeth. Use two currants or raisins for the eyes and press into the potato (scoop out a little hole with a fork for placement if needed).
Poke 4 holes in the base of the potato and insert the baby carrots as legs. Cut 1 small slit behind each eye and 1 slit at the back, add almonds to create ears and tail.
