'Gio' Taco Pumpkin Seed Salsa

The "Gio" Taco Pumpkin Seed Salsa

6 roma tomatoes halved

3 habaneros

2 tbs of ground chilies

1 tbs kosher salt

1 1/2 c water

3 tbs white vinegar

2tbs lime juice

1 c. canned chopped tomatoes

1c. roasted pumpkin seeds

1/4 c. chopped cilantro

1/4 c. chopped scallions


Place tomatoes and habaneros on a sheet pan and roast until blackened. Once they have cooled down place all ingredients in a food processor except for scallions and cilantro. Pulse ingredients until almost smooth, you still want some texture to the salsa.  Pour the salsa into a mixing bowl and add chopped scallions and cilantro. Taste the salsa when done for heat and salt and adjust to your liking.
