Heirloom Farmers' Market Spring Salad

Viva La Local Food Festival  Sunday , April 6 

Ingredients 

  • 6 oz of assorted greens such as spinach, kale or microgreens rightly chopped
  • 2 small oranges diced into bite sized pieces
  • 12 pieces of purple asparagus chopped to 1 inch pieces
  • 4-6 small radishes thinly sliced
  • 2 heirloom tomatoes chopped to bite sized pieces
  • 3 or 4 sprigs of cilantro finely chopped
  • Extra virgin olive oil to taste
  • 4 pinches of Chaat Masala
  • 3-4 tablespoons of crumbled goat cheese feta
  •  

    Preparation 

    Combine all fruits and vegetables in a large bowl

    Gently toss in a splash of olive oil

    Portion equally into 4 salad bowls

    Lightly season each dish with a pinch of chaat masala

    Top with goat cheese feta to taste
