1 1/2 cups of warm water (about 110 degrees F)

1/4-ounce package active dry yeast

1 teaspoon sugar

4 cups all-purpose flour

1/2 cup vegetable oil

1 teaspoon salt

In a large bowl combine the water, yeast, sugar, stir. Let it sit until mixture is foamy, about 5 minutes.

Add 2 cups of flour, half a cup of oil and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue add the flour, 1/4 cup at a time working the dough after each addition, until all the flour is incorporated, but the dough is still slightly sticky.

Turn the dough out onto a lightly floured surface and knead until smooth but still slight tacky,about 5 minutes.Add 2 teaspoons of oil to grease large bowl.

Place dough in bowl, cover with plastic wrap set in warm place, 1 to 1 1/2 hours to rise.

"Sauce" and Toppings

3 tablespoons extra-virgin olive oil

4 eggs

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 tablespoon milk

4 ounces mozz

4 ounces of asiago

4 ounces cheddar cheese

Make a dough ball. Stretch the dough to a approx. 8 inch circle.

Bake crust in preheated 450 degrees F oven for 6 minutes. Reduce oven to 375 degrees F. Remove pizza crust from oven.

Spread olive oil evenly on crust on pan.

Separately, beat eggs, milk, pepper and salt together in a bowl. Over a skillet scramble eggs, cook eggs. Placed prepared eggs over pizza. Sprinkle with cheese. Bake for approx. 5 minutes until eggs are set and crust is brown.
