Quick Pumpkin Soup - Apple Annie's Orchard

1 med. onion, grated on a box grater

1 (29-oz.) can puree pumpkin

2 (14.5-oz.) cans chicken broth

1/2 c. heavy cream

1 to 2 tsp. pumpkin pie spice

Papitas for garnish

1. Heat 2 Tbsp. olive oil in a sauce pot over medium-high heat. Add the onion and cook, stirring, 1 minute or until warm.

2. Stir in the puree pumpkin, chicken broth, heavy cream, pumpkin pie spice, and 3/4 tsp. salt and cook, stirring occasionally, 3 minutes or until soup simmers.
