Barrio Cuisine - Nopalito Salad

TUCSON, AZ (Tucson News Now) - Nopalito Salad (serves 4)

2 Romaine Lettuces (Chopped)
2 Roma Tomatoes (Medium Dice)
2 Avocados (Medium Dice)
1 cup Queso Fresco (Crumbled)
2 Cactus Pads (Cleaned, Cooked, Medium Diced)
1 Red Onion (Julienne, Pickled)
1 Cup Pomegranate Vinaigrette

Pickled Onion Recipe
1 Red Onion (Julienne)
1 Cup White Vinegar
1/4 Cup White Sugar
Procedure:  Mix sugar and vinegar in a bowl add julienned onion and store cold for 2 hours.

Pomegranate Vinaigrette Recipe
1 cup Pomegranate Juice
1/4 cup Olive Oil
1 tbsp. Dry Oregano
2 tbsp.  Sugar
Pinch of Salt
Procedure: In a small bowl combine Pomegranate juice, oregano, sugar, and salt. Slowly whisk in Olive Oil.

Cactus Pad Preparation
2 Cactus Pads Cleaned and Diced
3 Cups Water
2 tbsp. Salt
Procedure: In a pot bring water and salt to a boil add cactus and cook for 20 minutes. Drain and rinse and allow cooling down.
