TUCSON, AZ (Tucson News Now) - Cranberry Apricot Baked Brie - Creative Catering
- 1/2 Cup dried cranberries
- 1/2 Cup dried apricots
- 1/2 Teaspoon ground cinnamon
- 1/4 Teaspoon ground cloves
- A pinch of ground ginger
- 1 Tablespoon sugar
- 1 Cup Water
- 1 Egg
- 1 Sheet Puff Pastry
- 1 Brie Wheel
Start by putting together the fruit compote, finely dice the cranberries and apricots and then combine with cinnamon, cloves, ginger and sugar in a small mixing bowl.
Once all these ingredients are combined transfer to a two-quart cooking pot.
Add the water and cook over low heat bringing the mixture to a slow boil. Let mixture reduce and stir frequently to avoid burning, let cook for approximately 15-20 minutes. Once The mixture has reached the consistency of a chunky jam remove from heat and let cool.
Assemble an egg wash by cracking an egg gently making sure not to crush the entire shell. Separate the white from the yoke by transferring between the two shell halves. Once separated whip the whites until frothy.
To begin assembling the baked brie, make sure to have a clean flat work surface. Sprinkle the flour on the work station and lay out the puff pastry. Use a rolling pin and flatten out the dough to about 1/8 of an inch thick. Spread the fruit compote in the center of the dough where the brie will be placed. Using a sharp paring knife score one side of the brie, this will help keep the brie in place on the compote as well as impart the flavors of the compote into the brie. At this point take the brie and place it score side down on the fruit compote that is spread on the dough. Beginning at one corner start folding in brushing with egg wash as you go. Continue until all corners are folded in making sure to seal all openings and coating generously with egg wash. Lightly butter a sheet pan and gently flip brie onto the pan. Finish by egg washing the rest of the brie making sure to get an even coat across the whole brie. Place brie into a preheated 350 degree oven and let cook for 25-30 minutes until pastry is a beautiful golden brown.
