Oysters Rockefeller - Maynards Market & Kitchen

Ingredients:  

  • 6 Fresh Shucked Oysters of your choice
  • 1/4 cup small diced fennel
  • 1 tbsp minced Shallots
  • 1 tsp minced Garlic
  • 1 oz Pernod
  • 2 cups fresh spinach
  • 1 tbsp fines herbs (parsley, chive, tarragon)
  • 1/2 cup Mornay Sauce (creamy Parmesan sauce)
  • 1/2 cup grated Parmesan

 
Directions:  
1)      Preheat the oven to 450 degrees
2)      Saute the fennel, shallot, and garlic until translucent
3)      Deglaze with Pernod
4)      Add spinach and fines herbs, cook until wilted
5)      Add Mornay sauce to the pan, season with salt and pepper
6)      Top the oysters with the filling, and Parmesan
7)      Bake in the oven until browned, about 5 minutes
8)      Enjoy!
