Heirloom Tomato Salad -  PY Steakhouse

TUCSON, AZ (Tucson News Now) -

Heirloom Tomato salad from Chef de Cuisine Ryan Clark

  • 1 lb Heirloom Tomatoes, Sliced
  • 1/2 lb Mozzarella, Sliced
  • 2 oz Speck, Thinly Sliced
  • 2 T Extra Virgin Olive Oil
  • 1/4 c Wild Arugula
  • 1 tb Balsamic Pearls (you can purchase at www.finesaler.com)
  • Parmesan Cracker or Toast
  • Salt and Pepper, as Needed

Layer the tomatoes, mozzarella and speck as you desire.  Garnish with olive oil, balsamic pearls, cracker and arugula.  Season. Serves 2
