Gourmet Girls stopped by the KOLD News 13 studio on Monday afternoon for our weekly segment - What's for Lunch?

Featured this week: Springtime cupcakes!

Here's the recipe:

Butter Cream Frosting:

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 teaspoon vanilla
  • 4 cup confectioners sugar
  • 2 tablespoons milk

Directions: In a large bowl, cream together the butter, shortening, and vanilla.

Blend in confectioners' sugar, 1 cup at a time, beating well after each addition.

Beat in the milk, and continue mixing until light and fluffy.

Keep icing covered until ready to decorate.

Chocolate Cupcakes:

  • 1lb, 14oz all purpose flour blend
  • 1 tablespoon xanthan
  • 11 oz cocoa
  • 6 cups sugar
  • 2 tablespoons baking soda
  • 1 tablespoon baking powder
  • 1 tablespoon salt
  • 4 eggs
  • 3 tablespoons vinegar in measuring cup first then fill to
  • 3C with rice milk
  • 2/3 c oil
  • ¼ c vanilla
  • 3 cups warm water

Direction: Set the oven to 350 degrees. Put all liquid ingredients in bowl, then mix in dry.
