- 1 pound pasta (spaghetti)
- 6 Roma tomatoes
- 1/2 small bunch fresh basil,
- 1/4 cup of extra virgin olive oil
- salt and pepper to taste
Cook pasta according to package directions. While pasta is cooking, slice tomatoes in half. In a medium mixing bowl grate tomatoes. To the bowl add olive oil, basil, salt and pepper. Mix quickly and well.
When pasta is done, drain well and immediately add to serving dish. Once pasta is placed in serving bowl top with the tomato mix in mixing bowl. Serve immediately.
