Chorizo Burger - Dante's Fire

TUCSON, AZ (Tucson News Now) -

Happy Monday!

Today we have Chef Kenneth Voy from Dante's Fire Cocktails & Cuisine in our kitchen to show us how to make a chorizo burger! 

Here's the recipe:

Chorizo Burger - Burger Patty 

  • Ground Beef 85/15: 1 and ½ pound
  • Chorizo Sausage: ½ pound
  • Garlic Granulated: 1 teaspoon

Chipotle Mayonnaise

  • Chopped Chipotles: 1 teaspoon
  • Mayonnaise: 2 Cups
  • Chopped Garlic: ½ Teaspoon
  • Pinch of salt

Red Onion Jam

  • Red Onions Diced: 1 Cup
  • Jalapeños Diced: 1 teaspoon    
  • Red Wine Vinegar: ¼ Cup    
  • Sugar: 1/3 Cup    
  • Water: ¼ Cup
  • Chopped Garlic: ½ Teaspoon

Makes 4 half-pound burgers

Directions:      

  • Combine all ingredients in burger patty. Press into 8oz burgers. Chill.
  • Combine all ingredients for the Chipotle Mayonnaise in food processor pulse to combine. Reserve. 
  • Combine all ingredients for red onion jam in medium sauce pan. Reduce until thick. Chill.
