Pumpkin-Brie Quesadillas - Apple Annie's

TUCSON, AZ (Tucson News Now) - We're kicking off October with a unique pumpkin recipe.

Apple Annie's joins us in the studio for What's For Lunch? Today, we are making pumpkin-brie quesadillas.

There is also a fun event coming up for all the grown-ups called Find the Wine: A Corn Maze for Grown-Ups!

Five wine tasting stations will be up throughout the corn maze. The event is happening on Friday, Oct. 7 starting at 5 p.m. until dark.

The cost is $20 if you purchase tickets in advance at wineinthemaze.eventbrite.com or $25 if you purchase tickets at the event.


  • style="margin-top:0in;margin-right:0in;margin-bottom:2.25pt;">1-3/4 cups canned pure pumpkin
  • style="margin-top:0in;margin-right:0in;margin-bottom:2.25pt;">1 teaspoon chili powder
  • style="margin-top:0in;margin-right:0in;margin-bottom:2.25pt;">1 teaspoon minced fresh sage
  • style="margin-top:0in;margin-right:0in;margin-bottom:2.25pt;">1/4 teaspoon cayenne
  • style="margin-top:0in;margin-right:0in;margin-bottom:2.25pt;">Nonstick cooking spray
  • style="margin-top:0in;margin-right:0in;margin-bottom:2.25pt;">8 small flour tortillas
  • style="margin-top:0in;margin-right:0in;margin-bottom:2.25pt;">5 ounces brie cheese, thinly sliced


  1. style="margin-top:0in;margin-right:6.0pt;margin-bottom:0in;margin-bottom:.0001pt;vertical-align:baseline;">In small bowl, stir together pumpkin, chili powder, sage and cayenne.
  2. style="margin-top:0in;margin-right:6.0pt;margin-bottom:0in;margin-bottom:.0001pt;vertical-align:baseline;">Heat griddle over medium heat; spray with cooking spray. Place 4 tortillas on griddle and top each with 1/4 of the pumpkin mixture, 1/4 of the cheese and a second tortilla. Cook 4 to 6 minutes or until tortillas are golden and cheese melts, turning quesadillas halfway through cooking. Cut each into quarters and serve warm.
