TUCSON, AZ (Tucson News Now) - Vegetable and Baby Green Salad
1 bunch Watercress
1 Red Endive and/or Yellow Endive
1 Blood Orange
1 teaspoon Toasted Pine Nuts
1 Small Radish
1/4 Cup Shaved Carrot and Fennel mixed
1 teaspoon Pomegranate seeds
Passion Fruit puree
On a mandolin thinly shave your carrots, radish and fennel in to ice water.
Peel and segment blood orange and set aside.
Clean endive and separate your leafs.
In a small mixing bowl toss in your endive, shaved fennel, carrots and radish. Drizzle about ½ teaspoon of olive oil and Passion fruit puree. Sprinkle a pinch of salt
Once all ingredients in the bowl are nice and coated transfer over to a nice cold plate.
Place your Blood orange segments, pomegranate seeds and pine nuts over the salad.
Pick a small bunch of watercress and scatter over your salad.
Finish with a drizzle of Olive oil and some cracked black pepper.
