Holiday treats for giving and eating

TUCSON, AZ (Tucson News Now) -

Chef Ashley Chen stops by Fox 11 Daybreak to show us how to make truffles and tell us where the kiddos can go to make some holiday sweets.

Oreo Chocolate Ganache Truffles


Ingredients: 

  • 1 pound Semi Sweet Dark Chocolate 
  • 1 cup Heavy Whipping Cream 
  • 20 Oreo Cookies 

Equipment: 

  • Large bowl 
  • Medium size sauce pot
  • Whisk
  • Large zip lock bag 
  • Rolling pin
  • Small spoon 
  • Sheet pan lined with wax or parchment paper

Method:
Place the dark chocolate in a large bowl, set aside.

Put the whipping cream into a medium sauce pot and bring to a boil. (Watch the heavy cream, it can bowl over quickly!)

Once the heavy cream comes to a bowl, pour directly over the dark chocolate chips.

Mix the ingredients with a whisk until it is fully combined and smooth. If the mixture has small chunks of chocolate in it after the heavy cream was added, place the mixture over a water bath on the stove top. The chocolate will melt and the mixture will become smooth.

Refrigerate the mixture until firm. Once firm, scoop the ganache mixture onto the sheet pan with wax or parchment paper. Roll into small bite size balls. Set aside.

Place the Oreo cookies in the large zip lock bag and seal it up. Crush the cookies with the rolling pin, creating Oreo cookie crumbs. Place the cookie crumbs in a bowl.

Take the balls of ganache and place into your cookie crumbs and roll them until they are completely coated.
