What's For Lunch: Psych-O'Sullivan - Bisbee Breakfast Club

Chef Mitch Trotter from Bisbee Breakfast Club Mesa joined us to make the Psych-O'Sullivan for this week's "What's for Lunch" segment.

Psych-O'Sullivan Recipe:

For the Caramelized Jameson Cabbage and Onion:

  • 1/2 head of cabbage, roughly julienned
  • 1 yellow onion
  • 4 pieces crispy finely chopped bacon
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 crushed red pepper
  • 1/2 tsp oregano
  • 1/3 cup Jameson
  • 1 tbsp honey
  • 1 1/2 tbsp. yellow mustard Combine ingredients and sauté

For the Guinness Gravy:

  • 2 tablespoons butter
  • 1/4 cup finely minced onion or shallot
  • 2 teaspoons strong Dijon mustard
  • 2 teaspoons cornstarch
  • 1 cup chicken stock
  • 1 cup Guinness Draught
  • salt and pepper to taste

To assemble:

On bottom bun add Jameson cabbage and onion, then add burger patty with melted cheddar cheese, add corned beef, smother in gravy add top bun.
