Recipe from Wesley Taylor of Decatur, Ala.
1 Stick Margarine
1 1/4 Cups water
Melt margarine in boiling water.
Pour over:
1 Cup oat meal (you can use either Old Fashion Oats or Quick Oats)
Let this stand for about 30 minutes.
Add:
1 Cup brown sugar 1 1/3 cup flour (Plain)
1 Cup granulated sugar 1 tsp. baking soda
2 eggs 1 tsp. cinnamon
Grease and flour a 9 x 13 in. baking pan. Cook in a 350 degrees preheated oven for about 35 minutes or until the cake tests done.
Topping:
1 stick margarine 1 tsp. vanilla
1 cup evaporated milk 1 cup coconut
3/4 cup granulated sugar 1 cup chopped nuts
Bring the margarine, milk, and sugar to a boil (mediun heat) and add the coconut and nuts and boil for about 2 minutes. Pour this mixture over the top of the cake and place back in the oven under the broiler and cook another 2 minutes. Until the topping is golden brown. You need to watch this process because the topping will burn very easy.
