                     Gingered Fillet of Ruby Trout & Orange Panzanella Salad

Kingfisher / Bluefin Restaurants

Serves 8

2 Whole Trout, cleaned, split, and skinned
2 T powdered ginger
1/2 cup a.p. flour
2 T x-v olive oil
s&p

mix flour.ginger and s&p, lightly dust fillet, place x-v oil into med hot saute pan , and then put in fish, turn down to low, cook fish 2 minutes on side then gently turn and let cook slowly until done, about 2-3 minutes, cut each fillet in half, remove to salad


Orange Panzanella Salad

2 orange cut in sections
1/4 cup red wine vinegar
1/4 cup olive oil
1/2 cup fresh basil (chiffonnade)
1 cup split grape tomatoes
1/2 cup mozzarella cheese balls
salt and pepper
julienne carrots 1 cup blanched
4 cups toasted croutons

mix basil, oil and vinegar, and toss with the croutons so they soak up some of the flavor, then toss all ingredients together, season, let it sit for a moment or two then toss again, this will distribute the flavors
