What's For Lunch:

"Grilled Ahi & Vegetables"

Blanco Tacos & Tequila

1 - 5oz. Ahi (Cut into 4 pieces)

1 Cup Yellow Squash (diced)

1 Cup Chayote Squash (diced)

1/4 Cup Corn

1/4 Cup Roasted Red Peppers (diced)

 1 tsp. Garlic

2 tsp. Green Onion (sliced)

1 tsp. Cilantro (chopped)

2 tbl. Butter

2 oz. Lime Vinagrette

Salt & Pepper to taste

 

Directions: Season Ahi on both sides and place on grill or pan. Sear on high on each side. Center should be rare.

Saute veggies, butter and garlic in pan until veggies are tender.

Choose rice of choice, place on plate and top with vinagrette and cliantro.

Serve & Enjoy!
