Grilled Salmon with Arugula Green Beans,
and Roasted Red Pepper Salad
Serves 4
For the vinaigrette
½ cup lemon juice
1 ½ cups extra virgin olive oil
½ teaspoon ground coriander
1 teaspoon Dijon mustard
¼ cup Fresh Tarragon, chopped
Whisk all ingredients together in a small bowl to make the vinaigrette
For the Salmon
4 each four ounce salmon filets
1 tablespoon olive oil
Salt and pepper
Brush the salmon filets with the olive oil and season with the salt and pepper. Grill until done. About three minutes per side. Set aside
For the salad
1# fresh Arugula
2 cups Green beans blanched and cooled
1 cup Roasted red peppers cut into strips
Toss all the salad ingredients with about ½ cup of the vinaigrette brush the top of the salmon with some as well.
Divide the salad up between four plates and top with the grilled salmon.
