Beyond Bread's Gazpacho

2 pounds fresh tomatoes (cored & peeled) chopped
15 ozs tomato juice
1/3 cup diced scallions
1/3 bunch chopped cilantro
1 cucumber (peeled, seeded & chopped)
1 rib celery fine dice
1/3 cup red wine vinegar
4 tsp lemon juice
1 tsp hot sauce
1 tsp salt
2 tsp fresh chopped garlic
3/8 cup chopped bell pepper
FIRST PREP THE TOMATOES
Core and drop in boiling water for 1 minute
Cool tomatoes in an ice bath then slice in half and peel off skin
squeeze out seeds and dice
Peel, seed and chop cucumber
SOUP PREPERATION
Place all ingredients in a large bowl
Using bermixer blend well, while still retaining some product identity
Place 1/2 of the blended mixture into a separate container; puree
Pour the pureed portion back in with the other half and blend well
Makes 5 servings
