BISTRO PHILIPPE GREEN BEAN SEA SCALLOPS SALAD
3 Large Sea Scallops
2 ounces of cooked green beans
1 Tbl. Bacon
1 Tbl Goat Cheese
1 Tbl Almonds
5 ounces Romaine Salad
1 teaspoon each of diced: shallot, parsley and garlic.
1 Tbl Butter.
Sautee the bacon over medium heat, when crispy, add cooked green beans. Add butter, parsley, garlic and shallot. Turn heat to low. Toss well, remove from stove, and put aside. Using the same pan (keep some of the butter mixture inside) sear scallops at medium heat, 2 minutes on each side. Place chopped romaine lettuce in plate or bowl. Sprinkle bacon/green bean mixture over this, then add scallops, sprinkle with goat cheese and almonds. Add 2 spoonfuls of remaining garlic/butter over scallops to finish. Serves 1.
