Kingfisher's Clam Fritters
2 cups sifted all-purpose flour
2 1/2 tablespoons Baking Powder
2 teaspoons salt
1/2 teaspoon Freshly ground black pepper
sift into a large mixing bowl
Into a mixing bowl place:
4 cups chopped clams, preferably Quahogs
1 cup milk
2 oz melted butter
2 beaten eggs
and beat to incorporate
Add flour mixture to egg mixture and let stand for a few moments.
place 2 inches of Canola Oil into a heavy bottomed skillet, and heat gently to a temperature of 350 degrees, then using a spoon gently place egg size lumps of batter
into the hot fat and fry until golden brown. about two minutes per side, remove to a rack to drain, serve with tartar sauce or lemon
