Mediterranean Chicken

Serves one, but recipe can be doubled, tripled, etc.

Cut up chicken breast, brown in 1 T white wine

Artichoke hearts- canned is fine, use two or three

Sun dried tomatoes- a handful

Black olives- a handful

Fresh garlic- to taste

Salt and pepper to taste.

After browning chicken, add next six ingredients to the pan and cook until hot

Add pesto (walnut pesto is very good)- to taste

Add heavy cream to desired thickness

Cook penne pasta and stir into chicken mixture

Toss in feta cheese and fresh cut basil
