        Cafe Terra Cotta's Mexican Shrimp and Angle Hair Pasta

Yields: 1 serving

Ingredients:

4 ea  Large Shrimp

1 Tablespoon  Chopped Garlic

¼ cup  Diced Tomatoes

1 cup  Spinach

½ cup  Feta

½ cup Chicken Stock

2 Tablespoons  Butter

2 cups Cooked Angle Hair Pasta

1.      Heat a medium sized sauté pan on high heat with oil to coat the bottom of the pan

2.      Add the shrimp, garlic and diced tomatoes and cook until the garlic starts to brown.

3.      Add the chicken stock, spinach and half of the feta and reduce by half.

4.      Add the butter and pasta and toss until the butter is melted.

5.      Season to taste with salt and pepper.
