Kingfishers Creole Sauce Piquante  

1/2 cup xv olive oil

1 cup diced red peppers

1 cup diced green bell peppers

1 cup diced celery

1 cup diced onions

1 Tablespoon chopped garlic

1/2 cup chopped basil

1 cup sliced mushrooms

1 teaspoon red pepper flakes

1 T cumin

1 T chile powder

1 cup chili sauce (commercial product)

4 cups plum tomatoes in puree

2 each bay leaves

2 ounces regular Tabasco  

heat oil and sweat all vegetables and spices for 10 minutes, add remaining ingredients,  bring to boil and then simmer for 15 minutes, stirring frequently.
