                       Tequila Shrimp Penne Pasta - Cafe Terra Cotta                                                   

Yeild 1 serving

4 large shrimp peeled and devined
2 Tbls olive oil
1 Tbls chopped garlic
¼ cup diced green chili
¼ cup roasted corn
2 Tbls chipotle puree
¼ cup Tequila
½ cup cream
2 cups cooked penne
salt to taste
2 Tbls Queso Fresco

1.      Saute the shrimp, garlic, chipotle, green chili and corn with the oil until the shrimp loose there transparency.
2.      Add the tequila and cook until all the alcohol has burned off.
3.      Add the cream and pasta and reduce by half
4.      Season with salt and garnish with queso fresco
